Early Spring Salad

If you're not familiar with wheat berries they are firm and hearty, one of the meatier grains. High in fibre they are a great addition to a bean salad making it something more substantial.  I really like the texture and often use it as a base for salads, adding veggies and dressing.  Substitutions for wheat berries could be kamut (kamoot), quinoa, spelt, rice, cous cous, etc.)  Wheat berries, spelt, kamut, etc. are really easy to freeze. If it a bit of a process making them make extra and freeze for another meal.


Salad Ingredients:
  • 1 cup dry wheat berries, cooked and drained
  • 2 cups/500 ml cooked navy beans (or black beans, chick peas, etc.)
  • 1 English cucumber, diced
  • 1 red pepper, diced
  • 1 large tomato, diced
  • 2 large garlic cloves, minced
  • 1 cup fresh parsley, diced with large stems removed
  • 4 green onions, diced
  • Kosher salt + pepper, to taste

Dressing Ingredients:
  • 2-3 tbsp extra virgin olive oil, to taste 
  • 2 tbsp balsamic vinegar
  • 1 tsp hot mustard (or regular)
  • 1 tbsp Tamari (soy sauce)
  • 2 tbsp fresh lemon juice

Directions: In a medium bowl, soak the wheat berries overnight in cold water. If you have a rice cooker cook on brown rice setting (there is no need to soak).  The next day, drain the wheat berries and place in a medium sized pot, covered in 3 inches of water. Bring to a boil and then reduce heat to medium and simmer for 1 hour. They should be firm but not hard. Drain and cool.
In a large bowl, mix all salad ingredients.
In a small bowl whisk together the dressing ingredients.
 Now season with kosher salt and freshly ground black pepper to taste. Garnish with additional parsley if desired.
Yield: 7.5-8 cups.

Rustic White bean and Swiss Chard Medley


I looked in my food closet today to get some inspiration and googled a few recipes with white bean and swiss chard to get some ideas and then went ahead to create my own.  I found a few things in my fridge and used up some things I needed to get rid of. Feel free to change up any ingredients and use more or less of what you want. This is a simple dish with the natural flavors coming out and just a little tomato paste to bring it all together.

1 T coconut oil (or whatever oil you want)
2 cloves minced garlic
2 small leeks sliced-(can use onions)
1 red pepper chopped
1/2 soy chorizo from Trader Joes (or real meat chorizo/ textured vegetable protein w/ cajun seasoning)
1 bunch of organic rainbow swiss chard
2 cans of white beans (Also called cannellini)
2 T tomato paste -give or take (or tomato sauce)
1 bunch of organic rainbow swiss chard
15 cherry tomatoes I just happened to have
1/2 c water
salt and pepper to taste



Sauteed the leeks and garlic till soft on medium.
Add peppers stir for 1 minute.
Add chorizo or substitute or not.
Add chopped swiss chard and stir.
Add a 1/4 c of water to pan and put lid on to steam chard so it softens-1-2 mins.
Add white beans and stir.



I just happened to have some cherry tomatoes that were kinda old and getting shriveled so I halved them and threw them in.
 

I never seem to use up a whole can of tomato paste so i usually wrap up 1 T portions up in some parchement or wax paper and get it when I need it and defrost it right in the pan. You can also put it into an ice cube tray and pop them out and then freeze into nicer looking cubes.

Mmmmm. Stir up this delish dish and add some salt and pepper to taste.  I didn't need any salt but that was likely because the chorizo had enough in it.  Serve over brown rice.

Veggie Burger and Strawberry Greens




I like to keep frozen veggie burgers in the freezer for times when I'm in a pinch. I can't cook all the time!
I got one out of the freezer (Money's i think from Costco) and defrosted it, threw it in a pan to brown, toasted a flax pita, got some jack cheese , red peppers and blue cheese dressing and voila!




Balsamic Dressing for Strawberry Almond Wild Greens

1/4 c. balsamic vinegar
1/2 c. olive oil
1/4 c. veg oil or grapeseed oil
1 t. dijon mustard or seeded
1 t. brown sugar
1 t. honey
1 clove minced garlic

Pulse gently in a processer to emulsify ingredients or add oil slowly while continually whisking to get a nice creamy consistency.  Serve with toasted sliced almonds and sliced strawberries, or blueberries, or pears.

Summer Pasta in the winter



Brave the rain and cold and get out there and BBQ!

Wheat free Spagetti or regular- cooked al dente
A combination of grilled veggies-or just
     Grilled Asparagus - lightly oiled and salted
     Roasted red pepper- blackened part peeled off
Halved cherry tomatoes
Cubed avocadoes
Chopped basil
Shredded asiago
Drizzel of olive oil
1 garlic minced

Use the BBQed veggies from my other post and add them to cooked pasta. Serve cold or a touch warm.
